I love the sweet and tangy taste of this salad. It's quite filling so you can easily skip carbs.
It's better to soak the dal over night but if you forget to do so, like I did, then soak the dal in boiling water for 4 hours.
Ingredients
Moong Dal 1/4 cup
Carrot 1 large grated
Cucumber 1 cubed fine
Fresh coconut 1/3 cup grated
Fresh coriander 2 tbsp chopped
Dressing
Lemon juice 1 tbsp
Jaggery pd 2 tsp
Salt 3/4 tsp
Pepper pd 1/4 tsp
Method
Wash and soak Moong Dal over night.
Strain it and keep it in a colander so that all the water drains off.
Mix all the salad ingredients.
Whisk the dressing and pour over the salad.
Taste and adjust seasoning.
Serve immediately.
