Burnt Garlic Fried Rice
Who doesn't love chinese food , especially when made Indian style.
Burnt Garlic Fried Rice is different from regular fried rice. Here the garlic is fried till it turns smokey but is not literally burnt.
The vegetables are all chopped into small cubes . If using fresh corn , boil it first in salted water.
I prefer to use short grain rice for fried rice.
I served it with Chili Paneer.
You can also make a manchurian .

Ingredients
Raw Rice 1 cup
Onion 3/4 cup chopped
Garlic 1 1/2 tbsp chopped
Capsicum 1/2 cup chopped small cubes
Carrot 1/2 cup chopped small cubes
Frozen Corn 1/2 cup thawed
Oil 2 tbsp
Soy Sauce 1 tbsp
Chili Sauce 2 tsp
Pepper Powder 1/4 tsp
Salt 2 tsp
Vinegar 1 tbsp
Garnish
Green spring onion 1 tbsp
Method
Wash and soak rice for 20 minutes.
Heat water in a large pan and boil rice with some salt, till al dente.
Strain the rice and spread it on a large baking sheet to cool.
Heat oil in a wok.
Add chopped garlic.
Fry till garlic turns brown but doesn't get really burnt.
Quickly add onions.
Saute for a minute.
Add in carrots .
Stir fry on high flame for a minute.
Add in corn and capsicum.
Stir fry on high till the vegetables cook slightly .
They should retain some crunch, capsicum should not loose it's color.
Mix all the spices in a bowl.
Tip into the wok.
Mix well.
Now add rice and mix with a light hand.
Cook it till rice heats up properly and all the flavors mingle well.
Taste and adjust the spices.
Garnish with green part of spring onion.
Serve hot with Chili Paneer
