Another Zucchini dish from my kitchen. This gluten free dish is filling but quite light on the stomach so a perfect recipe for summer months.
If gluten is not an issue with you, you can also add boiled macaroni to the sauce along with the vegetables. The possibilities are many. Unleash your creativity.
The recipe makes a laborious read but trust me it's not difficult to make. There are different components which need to to be made in advance.
I have used a mix of all the bell peppers and broccoli and some zucchini. All chopped in small cubes. Feel free to use vegetables of your choice.
The combination of both white sauce and pizza sauce enhances the taste.
Apf 1 1/2 tbsp
Butter 2 tbsp
Milk 1 1/2 cup
Olive oil 1 tbsp + for brushing
Onion 1/2 cup chopped
Mixed Veg 2 cup
Frozen corn 1/2 cup
Cheddar cheese 25 gms
Pizza cheese 25 gms
Mixed herbs 1 tbsp
Salt to taste
Pepper to taste
Pizza sauce 1/2 cup
To make the white sauce : heat butter in a heavy bottom sauce pan. Add in all purpose flour.
Roast it lightly.
Now switch off the gas.
After five minutes add the milk, whisking all the time.
Once the milk has blended properly with the flour, switch on the gas.
Keep whisking continously and cook the white sauce until it is slightly thick.
Keep it aside to cool.
Using a slicer or the knife cut the zucchini into long slices.
Brush these slices with olive oil and cook them on a hot girdle till they are aldente.
Keep them aside.
Heat olive oil in a pan, add garlic and chopped onions.
Saute until onions are soft and pink.
Now tip in all the vegetables and cook till the vegetables are soft.
Chop the cheddar into small cubes.
To assemble :
Take an oven proof glass dish and brush it with butter.
Mix pizza sauce with white sauce. Add in the cooked vegetables. Add salt, pepper and mixed herbs. Give it a nice stir.
Taste and adjust seasoning.
Place the zucchini slices in a single row.
Spread some sauce. Dot it with a few cheese cubes.
Repeat till you use all the zucchini slices.
The top most layer should be the sauce.
Now grate pizza cheese or mozzarella over it.
Bake at 200 degrees celsius in a preheated oven till the cheese melts and the edges start changing color. 15- 20 minutes.
Serve hot with chilli garlic extra virgin olive oil.
