Vegan Salad dressing

If you like to replace your meals with salads like me then I am sure you would be on the look out for healthier dressings that are not overloaded with oil. This creamy cashew mint dressing is completely oil free. It's so versatile that it can be used as a dip for veggie sticks, as a spread for sandwiches or tortillas. The salt is perfect if using as a dip but you will need more salt if using as a salad dressing. I have used raw mangoes for tanginess but you can replace that with lemon juice or apple cider vinegar. You can add more water to make it make it thinner.

Ingredients Cashew nuts 1/4 cup Mint 2 handful Coriander 1 handful Garlic 1 large clove Green chili 1 Raw mango 2 tbsp chopped Salt 1/2 tsp or to taste Cumin pd 1/2 tsp Water 1/4 cup Method Soak Cashews in hot water for 4 hours. Drain the cashews. Grind everything to a fine paste. Keep it in a glass container in the fridge. Use as required.
