This homemade Eggfree Orange Cake is filled with so much orange flavor thanks to the orange zest and fresh orange juice. Soft and moist with a tender crumb from almond meal.
Enjoy this cake for breakfast, dessert, or as a mid-day snack! Leave it plain or serve it with a drizzle of orange syrup, dust with icing sugar or dress it up with whipped cream or cream cheese.
We need thick curd but not hung curd. You can also use store bought curd.

Ingredients
All Purpose Flour 1 cup 125 gms
Baking Powder 1/2 tsp
Baking Soda 1/2 tsp
Sugar 1/2 cup 100 gms
Almond meal 1/3 cup
Butter 30 gms
Oil 10 ml
Thick Curd 1/4 cup 70 gms
Orange Juice 120 ml
Orange Zest 2 tsp
Vanilla Extract 1/2 tsp
Method
Grease, dust and line a 6" round tin with parchment paper.
Sieve flour, baking powder and baking soda .
Now add almond meal and mix it well.
Take butter and oil in a mixing bowl and beat for a minute.
Now add sugar and beat until light and pale.
Add curd and beat well.
Mix in zest and vanilla extract.
Add dry ingredients and orange juice alternately in three instalments, starting and ending with dry ingredients.
Mix lightly with a silicon spatula, after each addition.
Mix well so that no dry flour is left,taking care not to over mix it.
Bake in a preheated oven at 170 degrees Celsius till a skewer inserted comes out clean.
Baking time would be around 30-40 minutes, depending on your oven.
Let the cake cool in the tin for 10 minutes, then carefully invert it on a wire rack.
Let it cool completely before you slice it.
Enjoy with a cup of tea/ coffee.
