Apart from mangoes, summer gives us a bounty of stone fruits like plums, peaches, cherries and apricots. When you get bored of eating these just like that try this gorgeous Stone Fruit Cobbler. I assure you, you will fall in love with it. You can use any combo of fruits or all of them. You can also use just a single fruit . Weigh the fruits after stoning them. Adjust the sugar quantity depending on how sweet your fruits are. Add 6 tbsp and then taste and add accordingly.
If the fruits are very sweet , add an extra tsp of lemon juice.
My biscuit top or Cobbler is also mildly sweet as I like it that way. You may increase the sugar quantity if you want. Peaches Apricots and Plums 600gms Sugar 6-9tbsp Lemon juice 1 tsp Cornstarch 4tbsp Cinnamon pd 1 tsp Cobbler Flour 1 cup Brown sugar 1/2 cup Baking Powder 1 tsp Salt 1/2 tsp Butter 80 gms Method Preheat the oven to 180 degrees Celsius Chop the fruits into small pieces. Place them in an 7 inch square glass dish. Sprinkle lemon juice, sugar, Cornstarch and Cinnamon. Mix lightly with a fork. Bake the fruits for 5-7 minutes. Meanwhile mix all the ingredients of Cobbler except butter. Chop the butter into small cubes. Using 2 forks or your finger tips mix in the butter till the mixture resembles bread crumbs. It's ok if a few bigger lumps are there. Sprinkle the crumbs over the fruits evenly across the entire surface. Bake at 180 degrees for 20 minutes or till the top turns golden brown. Serve it warm with vanilla ice-cream.
