Almond Ragi cookies

Almond Ragi Cookies with Almond Chocolate Filling I couldn't resist posting second recipe showcasing Almonds that I received from @pure_martindia in collaboration with #MuddyPuddle and @kirtikeepgoing. This recipe is very close to my heart. It's one of the first healthy cookie recipe that I created. My husband and I both like to have something sweet with our evening tea. So I am always on the lookout for healthy recipes. These bars have the goodness of Oats, Ragi, Almonds, dates and Flaxseed meal . They are mildly sweet and slightly chewy. Instead of almond chocolate spread, you can use a jam of your choice. The dough is not very firm . But it will come together when you press it between the cling films. Keep an eye while baking . These over bake easily.

Ingredients : RagiFlour 50 gms Almond flour 25 gms Oats 5 0 gms Flaxseed meal 25 gms Sesame seeds 25 gms Raw unrefined sugar 40 gms Cinnamon pd 1tsp Olive oil. 30 ml Dates paste 50 gms Baking Soda 1/2 tsp Salt 1/8 tsp Water 1/4 cup Filling : Almond Chocolate Spread 3-4 tbsp Method :

  1. Mix all the dry ingredients in a bowl

  2. Now add all the wet ingredients except water.

  3. Add 1 tbsp water at a time till you are able to bring the dough together.

  4. The dough should not be crumbly.

  5. Take a large piece of cling film. Oil it lightly.

  6. Tip this mixture over the cling film and press into a square.

  7. Cover it with another piece of cling film.

  8. Using a rolling pin roll it into a 9 by 12 inch rectangle .

  9. Spread Nutella on one half .

  10. Carefully fold over the other half and press lightly.

  11. Cut it into bars,

  12. Carefully place these bars over silicon mat.

  13. Bake in a preheated oven at 180 degrees Celsius for 12-14 minutes . The edges will start turning brown. Don't over bake them.

  14. They will be soft but will harden as they cool.

  15. Let the bars cool on the mat for 5 minutes.

  16. Then place them on wire rack to cool completely.

  17. Enjoy with tea, coffee or a glass of milk.
