Chole needs no introduction. Every household has its own recipe. For me chole means a quick and easy dish. It pairs beautifully with rice, roti, nan, kulcha and of course bhature.
Sharing a simple recipe of Chole ,using the masala curated by me.

Ingredients Chole 1cup Water 4 cups Tea bag 1 Salt to taste Onion 1 cup chopped finely Ginger 1 tsp chopped finely Garlic 1 tsp chopped finely Green chili 1 slit midway Oil 1 tbsp Asaefotida a large pinch Cumin seeds 1/2 tsp Carrom seeds 1/4 tsp My chole Masala 1 1/2 tbsp Tamarind chutney 2 tbsp Chopped coriander 2 tbsp Method
Wash and soak chole overnight.
Next morning wash them once again.
Boil them with 4 cups of water, salt and a tea bag till they are really soft and tender. 6-8 pressure.
In a separate pan heat oil.
Add asaefotida, cumin and carrom seeds.
Once they crackle, add green chili, onions and garlic.
Saute on medium heat for a couple of minutes. Now add ginger.
Saute till onions turn golden pink.
Add the chole Masala.
Saute for a minute.
Now tip in the chole.
Mix well.
Let it boil for 5 minutes.
Check water consistency and add more water if needed.
I didn't add any water as I like them thick.
Press with the back of ladle a few times to crush some chole.
Add in tamarind chutney.
Now taste and add more masala, salt ,if needed.
Give it a boil .
Garnish with chopped coriander.
Serve hot with roti or paratha.
