I am guilty of posting many sweet recipes for the ongoing product review for @pure_martindia in collaboration with @muddypuddleconsultingservices and @Kukclean under the guidance of @kirtikeepgoing. So I thought its only fair that my last recipe should be savoury. This walnut meat is a great substitute for meat in tacos, burritos, enchiladas and even as a spread on buns. Can also be used in salads. It's raw, vegan and can be prepared in a jiffy. Walnut meat contains healthy fats plus protein. It has heartiness from sundried tomatoes and smokiness from Paprika powder and Cumin powder.
Ingredients Walnuts 3/4 cup Sundried tomatoes 8 Garlic 2 cloves Whole red chilli 2 Red chili pd 1 tsp Raw sugar 1 tsp Cumin pd 1 tsp Paprika pd 1 tsp Water 1/2 cup Lemon juice 1 tsp
Method
Soak sundried tomatoes and whole red chili in hot water for an hour. Use this water while making the paste.
Chop Walnuts into small pieces.
Blitz Walnuts in a food processor to get a very small granule meal.
Make a paste of all the other ingredients using half cup water.
Remove in a deep bowl.
Mix in walnut meal.
Add lemon juice.
Taste and adjust chili, salt, lemon juice and salt.
Serve atop home baked wholewheat buns.
