This Amritsari Palak Paneer Bhurji is quite viral on the internet these days.
My sister tried this recipe and she just loved it. She then asked me to try it.
Made it today for an impromptu potluck lunch with the friends.
Needless to say, they simply loved it.
This dish can be prepared in a jiffy with very basic ingredients always available in your kitchen.
So here is the viral Amritsari Palak Paneer Bhurji with my twists.

Ingredients
Paneer 200 gms grated
Palak 2 handfull finely chopped
Oil 1 tbsp
Onion 1 large finely chopped
Tomatoes 2 large pureed
Ginger Garlic Paste 1 tbsp.
Green Chili 1 finely chopped
Lemon juice 1 tsp
Tomato Ketchup 1 tbsp (optional)
Kasuri Methi 1 tsp
Fresh Coriander 1 tbsp
Masala
Besan 1 1/2 tbsp
Red Chili Powder 1 tsp.
Turmeric Powder 1/2 tsp
Cumin Powder 1 tsp
Chole Masala 1/2 tsp
Pav Bhaji Masala 1/2 tsp
Chat Masala 1/2 tsp
Salt 3/4 tsp or to taste
Milk 1/4 cup
Yogurt 1/2 cup
Oil 2 tbsp
Method.
Dry roast besan in a pan on low heat until fragrant.
Keep a close eye on it and stir continuously to save it from burning .
Let it cool a bit.
Now add all the dry spices mentioned under Masala.
Mix well.
Mix in yogurt and milk.
Heat 2 tbsp oil and pour it over the besan mixture.
Mix well.
Your Masala is ready.
Take a kadahi, heat 1 tbsp oil in it
Add onions and saute until translucent.
Now add ginger garlic paste and saute till onions soften and turn slightly brown.
Add tomato puree and cook until oil floats on top..
Tip in the prepared Masala and palak.
Give it a quick stir.
Cook for a minute.
Add in grated paneer .
Mix well .
Add half a cup of water.
Bring it to a boil, let it simmer for a couple of minutes.
Remove from fire.
Crush kasuri methi between your palms and sprinkle over the paneer..
Mix in a tsp of lemon juice.
Now taste and adjust seasoning.
Garnish with chopped coriander.
Serve immediately with Indian bread of your choice
