Bombay Sandwich is a popular sandwich made with boiled potato filling and some veggies. These are very common not only on the streets of Mumbai but also in most Indian restaurants and tea shops. These pair very well with Indian masala chai.
Although taste best when had immediately after grilling but are a great choice for kids tiffin and road journeys. They taste much better with homemade bread.
Ingredients
Stuffing
Boiled Potatoes 300 gms
Chat masala 1 tsp
Green chili 1 finely chopped
Red chili powder 1/2 tsp
Amchur powder 1/2 tsp
Garam masala 1/4 tsp
Salt to taste
Chopped coriander 1 tbsp
Extras
Green chutney 3-4 tbsp
Onion 1 sliced into thin roundels
Cucumber 1/2 sliced
Tomato 1 sliced into thin roundels
Chat masala as needed
Butter as needed.
Bread slices
Method
Mash the potatoes.
Mix rest of the ingredients mentioned under stuffing.
Taste and adjust the spices.
Preheat your sandwich maker.
Butter a bread slice.
Spread some green chutney.
Place onion, cucumber and tomato slices.
Sprinkle chat masala.
Press potato stuffing generously.
Cover with another buttered bread slice.
Grill in the sandwich maker .
Cut into two triangles and serve with green chutney and tomato ketchup.
