Corn Handvo



Handvo ,a typical Gujarati snacks is made with lentils ,rice and lot of vegetables. Even readymade Handvo flour is available in the market. It is fermented with curd/ yogurt and then baked or made in a pan. If you donot have access to readymade flour then the lentils and rice has to be soaked and then ground into a paste.

I normally soak the lentils and rice to make Handvo. I donot buy the readymade flour.


This is a slightly different recipe that I am sharing today. I have used leftover Dosa Batter and not curd for fermentation. So it suits vegans also. To simplify matters further I have used flour combination and not lentils and rice.

The juicy corn niblets added a nice touch.


I baked it in cupcake tray as well as in a 6" tray.

Since the cupcakes baked earlier the crust was soft but the Handvo in the tray had a beautiful crispy crust and a very soft and spongy interior.



Ingredients

Fermented Dosa Batter 1 cup

Maize Flour 1/2 cup

Chickpea Flour 1/2 cup

Semolina Flour 1/2 cup

Water 3/4 cup

Frozen Corn 1/2 cup

Grated Carrot 1 cup

Grated Potato 1/2 cup

Grated Bottle Gourd 1/2 cup

Chopped Coriander 2 tbsp

Chopped Green chili 1

Grated Ginger 1 tbsp

Red chili powder 1 tsp

Turmeric powder 1/2 tsp

Salt to taste

Eno 1 tsp

Sesame seeds 2 tsp


Tempering

Oil 1 tbsp

Mustard seeds 1 tsp

Curry leaves 10

Sesame Seeds 1 tbsp


Garnish

Grated Coconut 2 tbsp

Chopped Coriander 2 tbsp



Method

  1. Mix all the flours and dosa batter.

  2. Add water slowly to get a thick batter.

  3. Let it rest for  20 minutes.

  4. Now add all the grated vegetables , green chili, coriander, ginger and thawed corn.

  5. Add more water if the batter is very stiff.

  6. We are looking for a thick idli like batter.

  7. Mix in all the spices.

  8. Grease and flour the baking dish and cupcake tray.

  9. You can also use cupcake liners.

  10. Sprinkle some sesame seeds.

  11. Preheat the oven to 180 degrees Celsius.

  12. For tempering

  13. Heat oil in a pan.

  14. Add in mustard seeds, curry leaves.

  15. Once mustard seeds crackle add sesame seeds.

  16. Pour this tempering in the batter. Mix well

  17. Mix the Eno thoroughly in the batter.

  18. Pour 1/4 cup batter in cupcake liners, if using  or pour it into the baking tray.

  19. Bake until a skewer when inserted comes out clean.

  20. Cupcakes will take anywhere between 25-30 minutes, and the Handvo in the baking tray will take around 50-60 minutes.

  21. Remove it from the oven once done.

  22. Let it sit for ten minutes.

  23. Garnish with coconut and coriander.

  24. Serve it warm with a green chutney or tamarind chutney.

  25. I personally don't need anything with it. Just a cup of ginger tea was enough for me.
