Cucumber and Coconut Salad

In this hot and humid weather, all we need are foods rich in water. Cucumber really helps the body to remain hydrated.

I often make this salad .

Use stiff hung curd else it will turn watery once we add salt.

The tempering provides a nice crunch.


Cucumber 1 1/2 cup

Coconut 1/2 cup

Hung curd 1/2 cup

Chopped coriander 2 tbsp

Chopped mint 2 tbsp (optional)

Green chili 1

Ginger grated 2 tsp

Salt to taste

Lemon juice 1-2 tsp


Oil 2 tsp

Mustard seeds 1 tsp

Curry leaves 10


  1. Wash and chop cucumber as per your choice.

  2. I prefer to chop them into thin cubes.

  3. Grate coconut.

  4. Mix rest of the ingredients except salt and keep it in the fridge.

  5. At the time of serving, mix salt .


  1. Heat oil in a pan.

  2. Crackle mustard seeds.

  3. Add curry leaves , once these turn crunchy pour over the salad.

  4. Mix lightly.

  5. Serve immediately.
