In this hot and humid weather, all we need are foods rich in water. Cucumber really helps the body to remain hydrated.
I often make this salad .
Use stiff hung curd else it will turn watery once we add salt.
The tempering provides a nice crunch.
Ingredients
Cucumber 1 1/2 cup
Coconut 1/2 cup
Hung curd 1/2 cup
Chopped coriander 2 tbsp
Chopped mint 2 tbsp (optional)
Green chili 1
Ginger grated 2 tsp
Salt to taste
Lemon juice 1-2 tsp
Tempering
Oil 2 tsp
Mustard seeds 1 tsp
Curry leaves 10
Method
Wash and chop cucumber as per your choice.
I prefer to chop them into thin cubes.
Grate coconut.
Mix rest of the ingredients except salt and keep it in the fridge.
At the time of serving, mix salt .
Tempering
Heat oil in a pan.
Crackle mustard seeds.
Add curry leaves , once these turn crunchy pour over the salad.
Mix lightly.
Serve immediately.
