Thandai Cookies


Holi and Thandai go hand in hand. Let us celebrate Holi with these healthy Thandai Cookies




Ingredients

Whole Wheat Flour 120 gms

Sugar 60 gms powdered

Butter 70 gms

Thandai pd 4 tbsp

Baking pd 1 tsp


For decoration

White chocolate 100 gms

Pistachio 2 tbsp finely chopped

Dried rose petals 1 tbsp


Method

  1. Mix all the dry ingredients together

  2. Beat butter for a minute.

  3. Now add powdered sugar and beat till light and fluffy, say three minutes.

  4. Now add the dry ingredients and beat on low speed, just to mix.

  5. If the mixture seems dry, add milk or water one tablespoon at a time.

  6. Keep the mixture in the fridge for atleast half an hour.

  7. Divide the dough into 15 pieces.

  8. Roll and flatten each piece slightly.

  9. Place them on a parchment lined baking tray and bake in a preheated oven at 170 degrees for 15-18 minutes.

  10. As each oven behaves differently, baking time would vary.

  11. Let them be on the baking tray for 10 minutes and then remove on a wire rack.

  12. Let them cool completely.

  13. To decorate:

  14. Melt white chocolate in small intervals of 10 seconds in the microwave

  15. Now dip the cookie partially in the chocolate.

  16. Sprinkle chopped pistachio and rose petals.

  17. Press lightly.

  18. Keep them on parchment paper.

  19. Instead of dipping them in melted chocolate, you can also pipe melted chocolate on the cookies.

  20. Once the chocolate sets, store them in an airtight container.
