Ragi (finger millet) is one of the most nutritious and healthy cereal. Ragi has a high protein content, its rich in calcium ,phosphorus, potassium and iron.
Beacuse its a complex carbohydrate , it helps in controlling diabetes.
My husband loves sweet roti (flat bread) made with ragi, jaggery and coconut. I always wanted to try Ragi Pancakes for him .
This recipe is inspired from an eggless pancake recipe shared on one of the food groups that I follow. The original recipe has All Purpose Flour and sugar. I have replaced all purpose flour with Ragi flour and sugar with Khajoor gur( date palm jaggery) . You can also use regular jaggery.
Serve it with a jam of your choice and some fruits on the side. I served it with the fruit of the season - Mango.
I served it with homemade strawberry jam and homemade
black grapes jam.
Ingredients Gives 4
Ragi flour 1/2 cup
Coconut milk 1/2 cup
Jaggery 2 tsp
Cinnamon pd 1/2 tsp
Baking pd 1 tsp
Vegetable Oil 2 tsp
Melted Butter 2 tbsp
Method
Warm the coconut milk slightly.
Stir in grated jaggery. Mix till it dissolves.
Now mix in the oil.
Mix all the dry ingredients in a bowl.
Pour in the wet ingredients into the dry ones.
Using a whisk mix lightly. Don't overmix it.
Its ok if the batter is slightly lumpy.
Let it rest for 2-3 minutes.
Heat a non stick pan.
Using a silicon brush smear melted butter on the pan.
Now pour 1/4 cup of batter.
Gently flip it once you see bubbles on the surface.
Cook the other side for 30-45 seconds and remove it on a plate.
Similarly make remaining pancakes.
Serve them immediately with a jam of your choice .
If the jam is too thick add little warm water to make it runny.
