Salads are my weakness. I love to play with ingredients to create colorful salads, each different from the other. Today I just had carrots. No cucumber also. So I made this carrot and raisin salad. I have used tiny black currants. As l love the contrast they create with red carrots. You can of course use raisins. A hint of ginger is all that you need to elevate this simple salad. For crunch I have added microgreens.
Ingredients Carrot 1 1/2 cup grated Black currants 1/4 cup Ginger grated 1 tsp Microgreens a few Salt to taste Red Chili powder 1/4 tsp Lemon juice 1 tsp Method
Mix ginger ,carrot and Raisins atleast two hours before serving.
This way the raisins will soak up the juice from carrots and plump up.
To serve,
Squeeze the carrots lightly, if they are very juicy.
This helps in keeping the salad dry .
Now mix in salt, chili powder, lemon juice.
Mix well.
Garnish with microgreens.
Serve immediately.
