Tomato-based barbecue sauce is a bold combination of tangy, sweet, spicy, and smoky flavors. Store bought ones are overly sweet and of course loaded with preservatives.
Most recipes use ketchup.Here I have tried to create barbecue sauce using freshly pureed tomatoes and my home cooked frozen tomato puree. Get the recipe here for tomato puree.
I have used freshly made red chili paste but you can easily replace it with chili powder.
It hardly takes 7-10 minutes to assemble this amazing sauce.
Ingredients
Fresh tomatoes 200 gms
Cooked tomato puree 100 gms
Garlic powder 1/2 tsp
Onion powder 1/2 tsp
Salt 1 tsp or to taste
Yellow mustard powder 1 tsp
Paprika powder 1 tsp
Red chili paste 1 tsp
Jaggery powder 2 tbsp
Molasses 2 tbsp
Apple Cider Vinegar 2 tbsp
Pepper 8-10 cranks of pepper mill
Method
Blend the fresh tomatoes in a blender.
Pass it through a sieve to remove seeds and skin.
Now take all the ingredients in a heavy bottom sauce pan, bring it to a boil.
Let it simmer for 7 minutes.
Keep stirring to avoid it from sticking to the bottom of the pan.
Remove from fire and adjust the spices to your taste.
Once it cools down keep it in the fridge in a glass bottle .
