Peach Mojito Mocktail

Mojito is a traditional Cuban high ball. The summer drink consists of white rum, sugar, lime juice, club soda/sparkling water and mint leaves. It's a combination of sweetness, citrus and minty flavors.

Mojito Mocktail or Virgin Mojito is a summer drink sans alcohol.

Peach Mojito Mocktail has peach puree added to the above ingredients. This minty sweet and citrusy drink with notes of peach can be highlight of any party.

With the Mercury hitting high, peaches are available in abundance. You can make peach puree ahead of time and then this drink can be assembled in a jiffy. You can add 60 ml of white rum to the recipe to create fabulous Peach Mojito.


Two medium sized peaches weighing 200 gms gave me a 150 gms pulp. This is enough for two glasses.


This recipe can easily be doubled or tripled.

Ingredients Gives 2 glasses

Peach pulp 150 gms

Mint leaves 20 + extra for garnishing

Lemon juice 2 tsp

Maple syrup or Honey 4 tbsp

Club Soda to top it off

Water 1 tbsp

Ice cubes 11/2 glass


Method.

  1. Wash and pat dry the peaches.

  2. Peel them and scrape off the pulp.

  3. Puree it in a blender.

  4. Wash the blender with a tbsp of water, add it to the pulp.

  5. Mix honey or Maple Syrup to the pulp and keep it in the fridge till you are ready to assemble the drink.

  6. Distribute the mint leaves in two glasses.

  7. Muddle them with a wooden spoon or rolling pin,so as to release the oils. We don't have to crush the leaves. Fill the glass 3/4 with ice cubes.

  8. Pour the puree and lemon juice.

  9. Top it with club soda.

  10. Garnish with some mint leaves.

  11. Serve immediately.
