Carrot Apple Ginger Soup

The mercury is dipping in our part of the world. All you want is a hot cuppa soup. This creamy Roasted Carrot Apple Ginger Soup is like a big hug – warm, comforting, and nourishing for the body and soul. Perfect for cold nights. All you need is homemade hearty bread to mop it up.

My carrot apple ginger soup is vegan, healthy,low on calories and nutritious.

I always have homemade stock powder in my pantry . You could use stock or plain water .

Although tart apples like Granny's Smith go very well in this soup, as they balance the sweetness of carrots, but you could use any type of apple available with you. You could always balance the sweetness with a dash of lemon juice.

This month's theme Healthy Ideas was given by the admins of the group Mayuri Patel and Renu Agarwal Dongre.

Mayuri is a very talented blogger. Her blog Mayuri's Jikoni has recipes from around the globe. Her Curried Chickpea Stuffed Sweet Potatoes, for the theme, looks very inviting.

I admire Renu for multi tasking. She has a full time job and is mother to two growing up kids. She still finds time to blog because she is passionate about it. Guess, one does find time for one's passion. Renu created this amazing Curried Carrot Celery Soup.

My partner for this month's challenge is Aruna SarasChandra . She blogs at vasusvegkitchen. Her blog is a must visit for original Andhra recipes . I have bookmarked her Pineapple Kesari Bhat.

She gave me thyme and apple as secret ingredients, using which I rustled up this creamy Carrot Apple Ginger Soup. I have her vinegar and carrot as secret ingredients. She made this delicious Veg Hot and Sour Soup.

Ingredients

Carrot 500 gms

Apple 150 gms

Ginger 3 tsp grated

Onion 1/ 2 cup finely chopped

Garlic 2 fat cloves minced

Pickled Jalepeno 1

Stock powder 1tsp

Water 2 1/2 cups

Olive Oil 2 tbsp + 1 tbsp

Thyme 1 tsp

Freshly cracked black pepper to taste

Lemon juice (optional) to taste


Method

  1. Wash and peel carrots. Slice them thin.

  2. Toss them in 2 tsp of oil .

  3. Sprinkle salt.

  4. Spread them in a single layer on a baking tray lined with parchment paper.

  5. Bake at 200 degrees Celsius for 20 minutes.

  6. Peel and slice apple and toss it in a tsp of oil.

  7. Add the apple slices to the same baking tray.

  8. Bake for another 20 minutes or till the carrots and apples are fork tender.

  9. Heat 2 tbsp oil in a deep sauce pan.

  10. Add garlic saute till garlic changes color slightly.

  11. Add in onion and ginger. Saute till onion softens and turns translucent.

  12. Tip in roasted carrots and apple with all the juices in tha baking tray.

  13. Add 2 cups of water, jalapeno and stock powder.

  14. Give a good mix and let it come to a boil.

  15. Simmer for 10 minutes .

  16. Let the mixture cool.

  17. Transfer to a blender and make a smooth puree.

  18. Pour it back into the same pot.

  19. Check the consistency, add boiling water if needed.

  20. Add thyme and freshly cracked pepper.

  21. Taste and adjust seasoning.

  22. Bring it to a boil and serve it piping hot with homemade bread on the side

  23. Can garnish with toasted pepita seeds and crushed thyme.
