Days when you don't want to spend too much time in the kitchen , this recipe comes handy. It's so easy and quick to make with very little oil. Believe me it's really tasty. Even people like me who are not very fond of Lauki like it.

Ingredients :
Lauki 500 gms
Oil 1/2 tbsp
Onion 1/2 cup finely chopped
Tomato 1 cup finely chopped
Green chilly 1/2 finely chopped
Ginger 1 tsp grated
Cumin 1/2 tsp
Asafoetida a pinch
Red chilly pd 1 tsp
Coriander pd 2 tsp
Turmeric pd 1/2 tsp
Salt to taste
Water 1/2 cup
Coriander leaves 2 tbsp chopped
Method :
Wash , peel and chop Lauki into small cubes.
Pressure cook Lauki with onion, tomato, ginger , green chilly , salt and half cup water for 3-4 whistles.
Heat oil in another pan .
Add asafoetida and cumin.
Once cumin turns golden, stir in red chilly pd, turmeric pd and coriander pd.
Fry for 30 sec. and add 1 tbsp water.
Pour this over the cooked Lauki.
Now add the remaining 2 tbsp water in the pan and bring it to a boil and pour it over the Lauki .
Taste and adjust salt.
If it's too liquidy , boil it for a couple of minutes.
It should be thick.
Garnish with chopped coriander.
Serve with roti or Paratha.
