Onion Jam

Onion jam or caramelized onion jam is a simple combination of onions, sugar, and vinegar, with your choice of herbs and other aromatics cooked down into a sticky, sweet, jam-like consistency. Unlike fruit jam, the onion pieces hold their shape. There is no pectin added to this jam.

The process is little time consuming as you have to caramalize onions on low heat but trust me the end result is worth it.

This sweet, tangy , aromatic condiment pairs well with crackers, crostini bagels, smoked or grilled chicken. Surprise surprise ,it tasted amazing with Adai also.



I made this for this month's theme Jam, Jellies, Chutneys and Relishes for my Facebook group "Shhh Cooking Secretly Challenge".

This is a fun group, where every month a theme is given by one member...then all the members are divided into groups of two. Now these two partners give each other two secret ingredients based on the theme. Then each member prepares a dish using these two secret ingredients and posts the pic on the group without naming the dish. Others are asked to guess the ingredients. It's so much fun. You are challenged to create something new. You interact with so many members and make some wonderful friends.



This month's theme was suggested by me.

My partner for the theme is my namesake Preethi Prasad of Preethi Cuisine.

She prepared this amazing Pepper and Dates Relish based on the Secret Ingredients "Fennel and Garlic Powder", where as I got an opportunity to make Onion Jam, which I had been wanting to make for so long, using the Secret Ingredients " Balsamic Vinegar and Salt."


Ingredients

Onion 400 gms

Olive oil 3 tbsp

Raw sugar 1/4 cup

Balsamic Vinegar 1/4 cup

Salt 3/4 tsp or to taste

Fresh Rosemary 2 tsp finely chopped.

Freshly ground Pepper to taste


Method

  1. Peel and wash the onions.

  2. Pat dry them and slice them finely.

  3. Micro high these onions in a glass dish for 2 minutes.

  4. Stir well and micro high again for a minute.

  5. This will soften the onions and reduce our cooking time.

  6. Heat oil in a heavy bottom sauce pan.

  7. Add the onions .

  8. Cook the onions on low heat , stirring from time to time.

  9. When onions caramalize, this will take 10-15 minutes, add sugar, balsamic vinegar, salt and Rosemary.

  10. Continue to cook further till it turns thick and sticky.

  11. Now add pepper.

  12. Taste and adjust salt and pepper.

  13. Let it cool completely before you store in a sterilized glass bottle.

  14. Keep it refrigerated.

  15. Stays fresh for 2 weeks.
