Quinoa , Apple , Cranberry Salad
A good salad is my weakness. We prefer having salads for dinner with some homemade bread . A bowl of soup is welcome if the weather is nice.
I try and use various combinations of grains, millets ,fruits and vegetables.
This salad comes together beautifully with pomegranate Molasses dressing.
Quinoa 1 cup cooked
Red Onion 1 medium
Cranberries 1/4 cup
Cashew toasted 1/4 cup
Basil 15 - 20 leaves
Pomegranate Molasses 2 tbsp
Extra Virgin Olive Oil 2 tbsp
Yellow mustard powder 1 tsp
Honey 1 tbsp
Salt to taste
Pepper to taste
Whisk all ingredients for dressing and keep it covered in the fridge .
Slice apple , cumumber and onion thinly.
Mix these slices and cranberries with quinoa and keep it in the fridge.
Mix the dressing in the salad.
Garnish with basil and toasted cashewnuts.
Note: you can replace pomegranate Molasses with balsamic reduction.
Can add parsley, lettuce.
