Quinoa , Apple , Cranberry Salad

A good salad is my weakness. We prefer having salads for dinner with some homemade bread . A bowl of soup is welcome if the weather is nice.

I try and use various combinations of grains, millets ,fruits and vegetables.


This salad comes together beautifully with pomegranate Molasses dressing.



Ingredients

Quinoa 1 cup cooked

Apple 1

Cucumber 1/2

Red Onion 1 medium

Cranberries 1/4 cup

Cashew toasted 1/4 cup

Basil  15 - 20 leaves


Dressing

Pomegranate Molasses 2  tbsp

Extra Virgin Olive Oil 2 tbsp

Yellow mustard powder 1 tsp

Honey 1 tbsp

Salt to taste

Pepper to taste


Method

  1. Whisk all ingredients for dressing and keep it covered in the fridge .

  2. Slice apple , cumumber and onion thinly.

  3. Mix these slices  and cranberries with quinoa and keep it in the fridge.


To serve

  1. Mix the dressing in the salad.

  2. Garnish with basil and toasted cashewnuts.

  3. Serve immediately.


Note: you can replace pomegranate Molasses with balsamic reduction.

Can add parsley, lettuce.
