Simple Salad

Having a salad as part of lunch menu is kind of mandatory for me. The problem is you can't have the same salad everyday. So to avoid monotony, I try to swich different ingredients and also play with dressing.

Last few days I was using lot of salad greens , today I decided to give a miss to lettuce and rocket.

I have used crunchy microgreens, mint, cucumber, corn, pomogranate and red cabbage.

For dressing , I have added kasundi with the regular ingredients.

Garnished it with dessicated coconut.

The outcome was really well appreciated by everyone at home.



Ingredients

Cucumber 1

Red Cabbage 1/4 cup

Corn 1/2 cup

Mint leaves a few

Microgreens a handful

Coconut 2 tbsp grated


Dressing

Kasundi 1 tsp

Honey 1 tsp

EVOO 2 tsp

Lemon juice 2 tsp

Salt to taste

Pepper powder to taste


Method

  1. Thaw the corn.

  2. Chop cucumber into small pieces.

  3. Chop red cabbage finely.

  4. Mix all the ingredients except coconut.

  5. Whisk the dressing.

  6. At the time of serving pour   the dressing onto the salad ,mix lightly.

  7. Garnish with grated coconut.

  8. Serve immediately.
