These Gluten-Free Sattu Almond Cookies are proof that wholesome treats can be every bit as delicious as their indulgent counterparts. Ingredients
Sattu Flour 150 gms
Butter 100 gms
Ghee 20 gms
Almonds 50 gms
Oats 50 gms
Jaggery Powder 90 gms
Baking Soda 1/2 tsp
Thick Curd 2 tbsp
Vanilla Extract 1/2 tsp
Almond Flakes as topping
Method
Grind almonds and oats into a powder.
Mix it with Sattu flour.
Your Flour mixture is ready.
Cream butter , ghee and sugar till pale in colour, and feels light and fluffy.
Add baking soda, curd and vanilla extract.
Cream for another minute.
Now add flour mixture
Mix with a spatula or a wooden spoon, until well combined.
If the dough feels dry , add a tbsp of curd or milk. The dough should be soft.
Don’t overmix.
Keep the dough in the fridge for at least 30 minutes.
Take small portions around 15-20 gms. Roll them into balls.
Sprinkle almond flakes/ coarse powder on top and press to get a slightly flattened disc.
Place it on a parchment lined baking tray.
Repeat the process till you finish the entire dough.
Cookies should be placed an inch apart.
Bake in a preheated oven at 160 degrees Celsius for 15 minutes.
Leave them on the baking tray for 5-7 minutes, till they firm up a bit.
Now let them cool completely on a wire rack .
Store in an air tight container and enjoy.

* Use chilled butter.
* Do not overbake the cookies since Sattu flour is already roasted , bakes quickly.
* Also , the cookies continue to firm up as they cool, giving you the perfect texture.
