Perfect Idli /Dosa Batter Recipe – Soft Idlis & Crispy Dosas Every Time
There is something incredibly satisfying about making your own idli dosa batter at home. Freshly fermented batter not only gives you soft, pillowy idlis and beautifully crisp dosas but also fills your kitchen with the comforting aroma of a traditional South Indian home.
While ready-made batter is convenient, homemade batter gives you complete control over the quality of ingredients, consistency, fermentation, and freshness. Once you learn the basics, making a batch becomes second nature, and you’ll always have breakfast or dinner sorted for several days.
This tried-and-tested recipe has been a staple in my kitchen for years. Whether you’re making idlis, dosas, uttapams, kuzhi paniyaram, this versatile batter works beautifully every single time.

Ingredients
Rice 3 cups
Urad Dal 1 cup
Methi Seeds 1 tbsp
Poha 1/2 cup
Water 400 ml
Method
Most people use idli rice but I prefer to use Sona masuri rice for making the batter
Wash rice and dal separately atleast 3 times .
Soak them separately in sufficient water for 6-8 hours.
Soak methi seeds with the dal.
Half an hour before grinding , wash poha and soak it.
Grind the dal along with methi seeds and poha to a very smooth paste.
While grinding the dal , throw in a few ice cubes so that the dal doesn’t heat up while grinding.
Remove it to a large pan.
Now grind the rice neither too coarse nor to fine, this way we can use the same batter for both idli and dosa.
Mix rice paste with the dal paste and with clean hands mix the batter thoroughly.
Now keep it in a warm place to ferment overnight.
The batter should rise well, become airy, and develop a pleasant, mildly tangy aroma.
Take out the amount of batter that you need. Add in salt.
Keep the remaining batter refrigerated.
Use it to a make a variety of South Indian dishes like idli, dosa, uttapam, kuzi paniyaram.
It’s best to make idlis with freshly fermented batter and the use the remaining batter to make other delicacies.

Tips for Perfect Fermentation
* Use good-quality urad dal.
* Avoid adding too much water while grinding.
* Grind the urad dal until light and fluffy.
* Mix the batter well with your hand before fermenting.
* During colder months, keep the batter in the oven with the light switched on or in another warm spot. Cover it with thick towel and place it on a mat.
* Refrigerate immediately after fermentation to prevent over-souring.

Storage

Add salt only to the portion of the batter you’d be using.

A Cold temperatures, old urad dal, can affect fermentation. Keeping the batter warm usually solves the problem.
Q Can I use the same batter for both idlis and dosas?
A Yes. This batter is designed for both. For dosas, simply thin the batter slightly with water before making them.
