Tava Naan

In this  pandemic situation when you can't go out to eat and are hesitant to order , try Tawa Nan at home.

These are surprisingly very easy.

I have used a combo of both atta (whole wheat flour) and maida(all purpose flour) , but you can use only maida.

In winters you need to rest  the dough longer .



For the dough:

All purpose flour 250grams

Whole wheat flour 250 gms

Baking powder 1/2 tsp

Baking soda 1/4 tsp

Sour curd 1/2 cup

Warm water 1 cup + 2 tbsp

Salt 1 1/2 tsp


For the topping:

Garlic cloves finely chopped

Coriander leaves finely sliced

Unsalted Butter / ghee

Nigella seeds



Method:

  1. Mix all the dry ingredients mentioned under dough

  2. Mix in curd.

  3. Now add water slowly to make a soft dough.

  4. Knead for a couple of minutes.

  5. Smear some oil ,cover and let it rest for 3 hours. In winters it may need more time.

  6. Finely chop garlic and fresh coriander.

  7. Divide the dough into ten  equal parts.

  8. Roll them into balls and keep them covered .

  9. Heat an iron tawa.

  10. Roll one ball into a medium thick roti approximately 5-6 mm thick.

  11. Brush some water on it.

  12. Place the Nan  with water surfaced on the tawa.

  13. Keep flame on medium.

  14. Brush water on the side exposed. Sprinkle garlic, coriander or Nigella seeds and coriander. Press lightly.

  15. Cook for approximately 1 minute. You will see bubbles on the surface.

  16. Flip the tawa in such a way that the Nan is facing direct flame.

  17. Rotate the tawa over the flame so as to get char marks all over the surface.

  18. Transfer the roti to a plate.

  19. Smear butter or ghee.

  20. Serve immediately.

Note:

  1. Make medium thick roti as thin ones upon cooking tends to harden like papad and very thick ones don't cook properly.

  2. Don't use a non stick tawa.

  3. Use iron or cast iron tawa.

  4. Use toppings as per your liking.
