Rum Soaked Fruits
Just after diwali when winter slowly sets in you can feel the spirit of Christmas. The bakers are reminded of soaking the fruits for the fruit cake. Last week I also soaked the fruits in Bacardi white rum. Earlier I used to soak them in old monk but after a bad experience a couple of years back I switched to Bacardi. You can use any combination of fruits. To keep things simple I use equal quantities of all the fruits and nuts
Ingredients Black currants 100 gms Raisins 100 gms Figs 100 gms Mixed citrus peel 100 gms Dried apricot 100 gms Walnuts 100 gms Cashews 100 gms Almonds 100 gms Kiwis 100 gms Cinnamon pd 1 1/2 tsp Rum 2 1/2 cups. [if !supportLineBreakNewLine]
Chop all the fruits and nuts into small pieces. Keep them in a wide mouthed glass bottle or a large glass bowl. Sprinkle Cinnamon pd. Now pour in rum. Mix well. Cover and keep in a dark place. Mix them everyday for the first few days. Then mix them twice a week and then once. Use them as and when required.
