Karela (Bitter Gourd) Peels Sabzi

Karela is rich in antioxidants and vitamins A and C, which are good for the skin. It reduces ageing and fights acne and skin blemishes. Karela juice adds lustre to the hair and combats dandruff, hair loss, and split-ends. Karela also helps in fighting diabetes.

Karela peels are generally thrown away. I use these peels to make this awesome side dish, whenever I am able to lay my hands on organic karela.

Ingredients :

Karela skin 1 cup

Potato. 1 large boiled

Mustard Oil. 2 tbsp

Mustard seeds 1/2 tsp

Fennel seeds. 1/4 tsp

Onions. 1/2 cup finely sliced

Red chilly pd. 1 tsp

Turmeric pd. 1/2 tsp

Coriander pd. 1 tsp

Fennel pd. 1tsp

Raw mango. 2 tbsp grated

Salt. To taste

Jaggery Powder. 1-2 tsp


Method:

  1. Chip the potato into small cubes.

  2. Rub salt on peels and let them sit for 15 min.

  3. Wash them and keep them on a colander.

  4. Drain and mix 1 tsp of jaggery powder and set it aside to cool.

  5. Once cool squeeze to remove excess water.

  6. Heat oil in a pan and crackle mustard seeds .

  7. Add fennel seeds , once golden add onions. Fry till slightly brown.

  8. Add potato cubes . Fry for a couple of minutes .

  9. Now add peels and fry till slightly crisp.

  10. Add all spices, sugar, salt and raw mango. Give it a good stir and fry for 2 more min.

  11. Remove from gas.

  12. Taste and adjust salt.

  13. Add more jaggery powder if its too bitter for your taste but remember it will be slightly bitter.

  14. Serve with dal rice.


Note ** you can use any vegetable oil if you don't like the flavour of mustard oil.
