Ingredients
Whole Wheat Flour 200gms
Butter 110 gms
Raw Sugar 100 gms powdered
Pistachio 1/4cup coarsely powdered + extra for toppings
Orange Zest 1/2 tbsp
Orange Juice 2 tbsp
Salt 1/8 tsp
Baking Powder 1/4 tsp
Baking Soda 1/4 tsp
Vanilla Exteact 1/2 tsp
Method
Rub zest into the sugar and leave it to rest for 10 minutes.
Cream butter and sugar till pale in colour, and feels light and fluffy.
Add baking soda, baking powder, orange juice and vanilla extract.
Cream for another minute.
Now add flour and pistachio powder.
Mix with a spatula or a wooden spoon, until well combined.
If the dough feels dry , add another tbsp of orange juice. The dough should be soft.
Don’t overmix.
Keep the dough in the fridge for at least 30 minutes.
Take small portions around 15-20 gms. Roll them into balls.
Sprinkle pistachio flakes/ coarse powder on top and press to get a slightly flattened disc.
Place it on a parchment lined baking tray.
Repeat the process till you finish the entire dough.
Cookies should be placed an inch apart.
Bake in a preheated oven at 160 degrees Celsius for 18-20 minutes.
Leave them on the baking tray for 5-7 minutes, till they firm up a bit.
Now let them cool completely on a wire rack .
Store in an air tight container and enjoy.
